Top of Saturday’s list of potential ways to pass an afternoon at home...


MINI EGG FLAPJACKS!


Now, we’re not saying flapjacks necessarily top the ranks of healthy bakes, BUT...they do have enough going for them to warrant some place in a varied, balanced diet.


Primarily, all the fibre, vitamins and minerals worth speaking of are owed to that most pivotal of ingredients - rolled oats. As for the mini eggs? Well, the nutritional contribution is negligible.


However, in the context of 2021, the proof is arguably as much in the put-in... as the pudding!!


As such, we’d be inclined to suggest the question mark is less over the mini eggs, and more over...where do I start?

Ingredients:

200 jumbo porridge oats

100g butter, plus extra for the tin

100g brown sugar

2 tbsp golden syrup

50g mini eggs


1. Melt the butter, then stir in the sugar and syrup.

2. Stir the butter mix into the oats along with the mini eggs, then press the mixture into a greased loaf tin

3. Bake for 20 minutes at 180 / fan
