Cooking isn’t something that the limitations of the working lunch break would usually allow for, but given that today is National Cooking Day, it’s a fitting time to tap into the huge potential that exists for easy, convenient hot lunches.
As we head into autumn, this idea is especially appealing, and there’s arguably no greater comfort food to tuck into than a classic vegetarian frittata.
Frittata is a widely underestimated meal idea, and thanks to the clever team at Two Chicks, getting this healthy, satisfying lunch to the table has never been faster… or easier.
When you’ve got hungry mouths to feed (your own not least of them!) THIS is the must have stock item you can’t afford to not have in your fridge.
Two Chicks ready-separated egg whites are fat-free, gluten-free, cholesterol-free, and preservative-free, and they’re also low in carbohydrate and low GI.
Two Chicks was born out of a love for healthy, tasty food, with owners Anna and Alla inspired to create this innovative, convenient product after discovering a gap in the market.
To make this quick-cook veggie frittata, all you need is:
½ red pepper
5 cherry tomatoes
A handful of green vegetables (we used broad beans)
50g Olives
½ pack feta cheese
1 carton Two Chicks organic egg whites
Method:
Preheat the oven to 180 degrees
Chop the tomatoes and pepper
Melt 10g of butter in an oven-proof pan
Add the vegetables and cook gently for a few minutes
Add one carton of Two Chicks Organic Egg whites, then the cheese and olives
Stir briefly
Transfer to the oven for 20 minutes
Two Chicks can be purchased at Tesco, Sainsbury’s, Morrisons, Waitrose, Whole Foods Market, Booths and online at Ocado and Amazon.
