Ingredients:
whole ripe avocados (roughly 1 per person)
1/2 - 1 red onion (depends how big your batch is)
1 tbsp lemon juice
A large handful of fresh coriander
Salt and pepper
Method:
Chop the onion very finely, place in the bowl and then add the lemon juice.
Peel and mash the avocados until smooth (with a few lumps remaining), then add to the onion in the bowl, and combine.
Chop up the coriander and then mix in with the avocado, leaving a few leaves to garnish the top.
Season with salt and pepper.
Serve with whatever your heart desires (I recommended corn tortilla chips or vegetable crudities).
